I got an offer from TCS for a ninja profile. Can I sit in the TCS NQT(2021) exam again to try for a digital profile? My training has not yet started.

First, As you've already been offered a job according to your qualifications/skills, you're not eligible to participate in any other drive, until they explicitly communicate with you about any chance to upgrade your offer, or something similar.

Second, yes, if you try to apply using some new credentials, at the time of verification, there would be something that marks your unique identity, and if they get to know that you’ve applied while already having an offer, they can terminate the existing offer.

Third, there can also be a scenario that you may be internally (after joining TCS) get a chance to get yourself upgraded to Digital Profile (as they have recently started offering a chance to existing employees to upgrade to digital if they have < 3 yrs of experience) so if you really want to join TCS, wait for the right moment to prove your mettle and don't rush into NQT. You may still apply for some new tests introduced by NQT or to improve your score, but that won't make you eligible to apply for TCS recruitment drive again.
